Say (Grilled) Cheese!

Did you know that April is National Grilled Cheese Month? Well, it is! And, lucky for you, we’re celebrating it by posting 10 of the yummiest grilled cheese recipes.

We probably all agree that a grilled cheese makes just about any bad day a little better. But what if you could spice it up and give the classic grilled cheese a twist? We’re not saying to get rid of the classic grilled cheese altogether, we just suggest making things a bit more exciting… and tastier!

Below are 10 grilled cheese recipes that are bound to brighten up your day and make April a bit more bearable:

1.    The Mac & Cheese Grilled Cheese Sandwich

Just imagine: a hybrid between your two favorite comfort foods. It won’t even take you more than 20 minutes and that’s including the time it takes to make the mac & cheese.


1 tablespoon of vegetable oil (to toast the slices of bread)

2 slices of white bread (toasted)

2 slices of sharp cheddar cheese

½ cup of macaroni and cheese (use your favorite recipe!)




2.    Jarlsberg Grilled Cheese and Ham Sandwich

Add a little ham and you’ve got your protein!


2 slices of Italian style loaf bread

4 slices of Jarlsberg cheese

2 slices of deli sliced ham

1 tablespoon of butter or vegetable oil (to toast the slices of bread)

3.    Fontina Grilled Cheese with Arugula & Truffle Oil

Because who doesn’t love truffle oil…


2 large slices of sourdough bread

1 tablespoon of black truffle oil

2 ounces of Fontina cheese

A sliced
a handful of fresh arugula (roughly chopped)

4.    Caprese Grilled Cheese Sandwich

Forget about the carbs because you’re basically having a salad (minus the bread, that is)


2 thick slices of French bread

3-4 small sliced tomatoes

6 ounces of mozzarella cheese (sliced or shredded)

8-10 fresh basil leaves

2-3 tablespoons of butter

¼ cup of grated Parmesan

5.    Jalapeno Popper Grilled Cheese Sandwich

And for those of you who can’t get enough spice…


2 slices of sourdough bread

2 jalapeño peppers (chopped)

1 tablespoon of butter (to toast the slices of bread)

2 tablespoons of cream cheese

½ cup of jack and cheddar cheese (shredded)

1 tablespoon of tortilla chips (crumbled)




6.    Ultimate Nacho Grilled Cheese Sandwich

A little Mexican feel in your favorite American snack. And, lucky for you, this recipe makes more than just one sandwich!


4 English muffins (I used Thomas' Corn English muffins)

8 pieces of Colby Jack cheese

A handful of your favorite tortilla chips

8 tablespoons of nacho cheese

A handful of sliced or chopped black olives

A small jar of pickled jalapeños

1 can of black beans

2 tablespoons of chopped green onions

Prepared guacamole

A jar of your favorite salsa

Container of sour cream

1 tablespoon of butter (to toast the English muffins)

7.    Green Goddess Grilled Cheese Sandwich

For those of you who find it necessary to eat your green veggies, this is definitely the recipe for you


1 clove of garlic

½ small shallot (chopped)

1 teaspoon of lemon juice

A handful of parsley (chopped)

 handful of kale (chopped)

2-3 tablespoons of fresh tarragon (chopped)

1 tablespoon of chives (chopped)

¼ cup olive oil

Salt and pepper

8.    Grilled Cheese and Fried Egg Sandwich

Feeling a little adventurous? Why not have a grilled cheese for breakfast?


2 slices of sourdough bread

6 slices of pancetta

1 tablespoon of butter (to toast the slices of bread)

4 slices of provolone cheese

2 fried eggs

1 small green onion (chopped)

Parmesan cheese shavings

A handful of arugula leaves

9.    Grilled Brie and Nutella Sandwich

Nutella…Need I say more?


2 slices of brioche

1 tablespoon of butter

2 tablespoons of Nutella

2 slices of brie

Add strawberries or bananas for that extra something




10. Waffle Baker Grilled Cheese Sandwich

And this one is just your classic grilled cheese, but looks like a waffle!


2 slices of white bread

3 ounces of cheddar cheese

2 tablespoons of salted butter

And just toast it in a waffle baker instead of in a skillet!
